Daisuke Hirose

He graduated from the Okayama Gakugeikan High School of Food Cooking Department and entered Ecole Tsuji Tokyo. And he studied at Tsujicho Group french school and trained at Carcassonne in southern France. After returning to Japan, he acquired a modern French cuisine restaurant "Citabria" and "Velours" in Minato-ku, Tokyo. In May 2010, la cuisine française Barbacane opened.

From the shop name:
Carcassonne is a historic fortified city registered as a UNESCO World Heritage Site. Like Himeji castle, there is a Gun port in the tower. In French it is called “Barbacanne”. In the name of Himeji in my hometown and my training place, he made a name of Barbacanne.
